Why the spoken tutorials are directly jumping to teach the command? Even they don't instruct to make a file related to that vedio.Facing so much problems to give commands

In video ls -l example1, this command gives the result -rwxr--r-- 1. But in my system, when I execute this command, it gives the result -rwxrw-r-- 1. Why? And what is the meaning of this result? What we can know from this result?

What is the meaning of "owner of a file"? Is it mean by administrative of the device? If we remove write permission for all by a-w, then is it remove the write permission for owner also? If it remove the write permission for owner, then how we can write the file?
